Meatless..
Just bought a vegetarian cookbook (not sure why), it's my goal to try most everything in the book.
Tonight I'm either making Potato Zucchini Hash or White Bean and Sage patties with roasted Tomatoes.
That's if I get off the couch..

The one thing that annoys me about vegetarianism (sp.?) is that all the folks I know who don't eat meat have to take various supplements to compensate for the lack of whatever the body needs and that would be found in meat.
So they eat fresh and eat only good stuff, yet they have a dozen bottles of pills lined up.

I just need to eat more vegetables.

lola, have you tried ratatouille? It's pretty excellent. Here's a recipe for it.
1/4 cup olive oil, plus more as needed
1 1/2 cups small diced yellow onion
1 teaspoon minced garlic
2 cups medium diced eggplant, skin on
1/2 teaspoon fresh thyme leaves
1 cup diced green bell peppers
1 cup diced red bell peppers
1 cup diced zucchini squash
1 cup diced yellow squash
1 1/2 cups peeled, seeded and chopped tomatoes
1 tablespoon thinly sliced fresh basil leaves
1 tablespoon chopped fresh parsley leaves
Salt and freshly ground black pepper
Directions
Set a large 12-inch saute pan over medium heat and add the olive oil. Once hot, add the onions and garlic to the pan. Cook the onions, stirring occasionally, until they are wilted and lightly caramelized, about 5 to 7 minutes. Add the eggplant and thyme to the pan and continue to cook, stirring occasionally, until the eggplant is partially cooked, about 5 minutes. Add the green and red peppers, zucchini, and squash and continue to cook for an additional 5 minutes. Add the tomatoes, basil, parsley, and salt and pepper, to taste, and cook for a final 5 minutes. Stir well to blend

I like ratatouille but the only time I eat it is when they have it at the cafeteria at work.

Well one can try
For some reason, I feel weird eating eggplants. When I was a kid, threw up once after eating eggplants. But I was sick during that time too. Even after growing up, I am not able to rationalize myself enough to eat it.
Sad because my mom makes a sick eggplant side. As sis loves it, it was made almost 3, 4 times a week :lol

I can't get passed the texture or eggplant. I want to like it but I don't, just like brussel sprouts.
